Healthy Protein Pancakes

There’s nothing I love more than a lazy Saturday when there’s nothing at all going on except for the opportunity to make my delicious protein pancakes. I’ve been tinkering with this recipe for the better part of the year and I think I’ve got it down to an art. Below you will find the recipe that I use to make a filling, high protein, healthy brekkie!

Ingredients:

1 banana, cut in half
1 scoop protein powder (keep it simple with vanilla or chocolate)
1 TBSP coconut flour
2 eggs (1 whole and 1 egg white)
½ tsp Vanilla extract
½ tsp Baking powder
¼ tsp Salt
Cinnamon
Water or milk of your choice as needed to make the batter a little runny

*During the fall, add some mashed sweet potato or pumpkin puree plus pumpkin pie spice!!

Directions

1. Mash 1/2 the banana. Then add the eggs. Combine until mixed well.
2. Add all dry ingredients. Add water as needed. Mix well.
3. Take a spoon and pour the batter into a pre-heated pan or waffle maker coated with oil spray.
4. Flip after a toothpick comes out clean. They won’t bubble like normal, store-bought pancake mixes. Watch them carefully!
5. Once finished, you can add peanut butter, flax/chia seeds, the other half of the banana, fruit, nuts, yogurt, syrup or anything your taste buds desire!
